Thicker bone-in chops cut from the loin or rib section.  This is a cut we are really proud of, we do at times have some smaller chops available that will be leaner, however our normal inventory has a large loin eye section with a level of intra muscular fat that you don't find in most store bought chops.  The combination of the 3 main breeds we raise (Berkshire, Duroc and Chester White) all have been selected for the level of old school pork flavor they provide and they excel at achieving a level of marbling that that helps to keep these chops moist and juicy when cooked.  If you like to play around smoking things for dinner, these should be at the top of your list.
